White chocolate and berry shortcake
- 200 grams butter
- 1 cup sugar
- 1 egg
- 1 tsp vanilla essence
- 2 cups flour sifted
- 2 tsps baking powder
- 2 cups frozen berries
- 1/2 cup chopped white chocolate
- icing sugar and cream to serve
- Cream butter and sugar
- Add eggs and vanilla and beat well
- Fold in flour and baking powder
- Press 2/3 of mixture into a slice baking pan
- Spoon berries over and sprinkle with chocolate
- Sprinkle with remaining shortcake mixture
- Bake 35 - 40 minutes in a medium oven until golden
- Serve dusted with icing sugar and accompanied with whipped cream
