Apricot Fudge Slice

  • 125 grams butter
  • 1/2 cup brown sugar
  • 1/2 tin sweetened condensed milk
  • 1 cup chopped dried apricots
  • 1 x 250 gram packet of plain biscuits crushed
  • 100 gram butter
  • 1 1/2 cups icing sugar
  • grated rind and juice of 1 lemon
  • 1-2 tbsp hot water
  1. Melt butter, brown sugar and condensed milk
  2. Add apricots and biscuits
  3. Spread into a slice tin
  4. Beat butter until light and fluffy
  5. Add icing sugar, lemon and enough water so you have a light fluffy mixture
  6. Spread over slice
