Lemon Meringue Pie - Sweetened Condensed Milk Version
- 250 grams crushed plain biscuits
- 125 grams butter melted
- 400 gram tin sweetened condensed milk
- 3 eggs separated
- 1/2 cup lemon juice
- 2 tsp lemon rind
- 1/2 cup sugar
- Combine biscuit crumbs and butter and press into base of tin, refrigerate till firm
- Beat together condensed milk, egg yolks, lemon juice and rind
- Pour over biscuit base
- Beat egg white till soft peaks form and beat in sugar till stiff
- Spoon meringue over filling
- Bake in medium over for 15-20 minutes
