Blueberry Cake

  • 125 grams butter
  • 1 cup sugar
  • 2 large eggs separated
  • 1 tsp vanilla
  • 1/2 cup milk1 1/2 cups blueberries lightly floured
  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  1. Cream butter and sugar
  2. Add egg yolks and vanilla 
  3. Stir in 1/3 flour and baking powder sifted together
  4. Stir in 1/2 milk
  5. Add another 1/3 flour
  6. Stir in remaining milk then remaining flour
  7. Fold in stiffly beaten egg whites then blueberries
  8. Sprinkle top with sugar
  9. Bake in medium oven for 45 - 50 minutes
