- 1/4 cup chopped dried apricots
- 1/2 cup water
- 100 grams butter
- 1/2 cup brown sugar
- 1 egg
- 1/2 cup milk
- 2 cups flour
- 4 tsp baking powder
- Put apricots and water in a pot
- Bring to boil and cook for 5 minutes
- Remove from heat
- Stir in butter and sugar and mix until butter melts
- Cool slightly
- Beat eggs and milk together and add to saucepan
- Mix well
- Stir in dried ingredients
- 3/4 fill muffin tins
- Bake at 190 degrees Celsius for 15 - 20 minutes
