- 100 grams butter
- 1/4 cup icing sugar
- 1 cup flour
- 2 eggs
- 2 tbsp lemon juice
- 2 tsp grated lemon rind
- 1 cup sugar
- 2 tbsp flour
- 1/2 tsp baking powder
- 1 tbsp icing sugar
- Beat butter and icing sugar till smooth
- Stir in flour and mix
- Press evenly into slice tin
- Bake at 180 degrees Celsius for 20 minutes
- Beat eggs and stir in lemon juice and rind
- Stir in sugar, flour and baking powder
- Pour over base and bake for another 25 minutes
- When cool sprinkle with icing sugar
