Lemon slice


  • 100 grams butter
  • 1/4 cup icing sugar
  • 1 cup flour
  • 2 eggs
  • 2 tbsp lemon juice
  • 2 tsp grated lemon rind
  • 1 cup sugar
  • 2 tbsp flour
  • 1/2 tsp baking powder
  • 1 tbsp icing sugar
  1. Beat butter and icing sugar till smooth
  2. Stir in flour and mix
  3. Press evenly into slice tin
  4. Bake at 180 degrees Celsius for 20 minutes
  5. Beat eggs and stir in lemon juice and rind
  6. Stir in sugar, flour and baking powder
  7. Pour over base and bake for another 25 minutes
  8. When cool sprinkle with icing sugar
