Vegetable self-crusting quiche

  • 1 tsp oil
  • 2 finely chopped onions
  • 2 crushed cloves garlic
  • 4 cups cubed vegetables cooked
  • 1 cup grated cheese
  • 1/2 cup self-raising flour
  • 1/2 cup milk
  • 3 eggs
  1. Fry onion lightly 
  2. Put vegetables into a quiche dish
  3. Mix remaining ingredients
  4. Pour over vegetables
  5. Sprinkle additional cheese over the top
  6. Bake 200 degrees Celsius for 30 minutes until cooked
