Sticky Date Pudding

  • 1 1/4 cup dates chopped
  • 1 cup water
  • 1 tsp baking soda
  • 60 grams butter
  • 2 eggs
  • 1 1/2 cups flour
  • 2/3 cup sugar
  • 1 tsp vanilla
  1. Boil together dates and water until mushy
  2. Add baking soda and butter - stir till butter melted
  3. Cool a little then add remaining ingredients
  4. Bake at 190 degrees Celsius for 25 minutes
  5. Serve warm with sauce and whipped cream
Sauce
  • 2/3 cup brown sugar
  • 2/3 cup cream
  • 50 grams butter
  • 1/2 tsp vanilla
  1. Melt butter and sugar together
  2. Add cream and vanilla
  3. Stir until well mixed
