Pistachio white chocolate biscuits

  • 1 egg
  • 1/2 cup light olive oil
  • 1 cup brown sugar
  • 1 cup flour
  • 1/2 cup self-raising flour
  • 3/4 cup pistachio kernels chopped
  • 200 grams white chocolate chopped
  • 50 grams white chocolate melted
  1. Beat egg, oil and sugar until thick and pale
  2. Sift in flours
  3. Add pistachio and chocolate
  4. Mix
  5. Roll into balls, flatten with a fork and bake 12-15 minutes in moderate oven
  6. When cool drizzle over melted chocolate
