- 1 egg
- 1/2 cup light olive oil
- 1 cup brown sugar
- 1 cup flour
- 1/2 cup self-raising flour
- 3/4 cup pistachio kernels chopped
- 200 grams white chocolate chopped
- 50 grams white chocolate melted
- Beat egg, oil and sugar until thick and pale
- Sift in flours
- Add pistachio and chocolate
- Mix
- Roll into balls, flatten with a fork and bake 12-15 minutes in moderate oven
- When cool drizzle over melted chocolate
