Curried cashew and carrot soup

  • 1 tbsp butter
  • 2 tbsp curry powder
  • 2 onions chopped
  • 500 grams carrots chopped
  • 3 cups vegetable stock
  • 100 grams roast cashews
  1. Melt butter and cook curry powder and onions
  2. Add carrots and stock and simmer until tender
  3. Add cashews and brown cashews
  4. Process with food processor until desired thicknesses
  5. Serve with chopped coriander
