Blueberry Cheesecake Cupcakes
- 100 grams softened butter
- 50 grams cream cheese
- 3/4 cup sugar
- 2 eggs
- 1 tsp lemon zest
- 1 cup flour
- 1 tsp baking powder
- 2 tbsp warm milk
- 3/4 cup blueberries
- 50 grams butter
- 100 grams cream cheese
- 1 1/2 cups icing sugar
- 1 tsp lemon zest
- Cream butter, cream cheese and sugar
- Add eggs and lemon zest
- Add flour, baking powder and milk
- Stir in blueberries
- Bake for 17 minutes at 190 degrees Celsius
- Let cool
- Beat icing ingredients together and ice
