Spicy Peach and (Butterscotch) Muffins
- 3 cups flour
- 3 tsp baking powder
- 1 cup sugar
- 1 tsp ginger
- 2 tsp mixed spice
- 2 tsp cinnamon
- 1 tsp baking soda
- 410 gram can peach slices
- 125 grams melted butter
- 2 large eggs
- 1/2 cup peach juice
- 1/2 cup milk
- Place dry ingredients in a bowl and mix well with a fork.
- Drain peach slices, reserve juice and cut each slice into about 4 pieces.
- Mix wet ingredients thoroughly. Add peach slices.
- Make a well in the middle of the dry ingredients.
- Add wet ingredients and combine. Do not over mix. If the mixture is too dry add extra milk
- Bake in muffin tins at 220 degrees Celsius for about 12-15 minutes.
- An option is to brush with a butterscotch topping while still hot.
- For this mix 25 grams butter, 1/4 cup brown sugar. Heat gently till smooth. Add 1/4 cup sour cream and 1/2 tsp vanilla. Brush over muffins.
